Easy Pumpkin Muffins

Equipment

  • Medium mixing bowl
  • 2 Muffin tins

Ingredients
  

  • 1 boxed spice cake mix
  • 15oz can plain pumpkin puree NOT canned pumpkin pie mix that has seasonings already
  • 3 eggs
  • 1/4 cup water
  • 5-6 oz chocolate chips (Optional)

Instructions
 

  • Preheat oven to 350deg
  • Line muffin tins with paper liners
  • In a medium mixing bowl, add pumpkin puree and spice cake mix. Stir with wooden spoon until well blended
    1 boxed spice cake mix, 15oz can plain pumpkin puree
  • Add beaten eggs and water. Stir until blended
    3 eggs, 1/4 cup water
  • (Optional) Add desired amount of chocolate ships and mix
    5-6 oz chocolate chips
  • Fill individual muffin cups to about 3/4 of the way
  • Bake for 15-18 minutes, testing with a toothpick for doneness. Toothpick should come out clean.
  • Enjoy!
