Easy Pumpkin Muffins
Really easy pumpkin muffins that you will love every fall.
Equipment
- Medium mixing bowl
- 2 Muffin tins
Ingredients
- 1 boxed spice cake mix
- 15oz can plain pumpkin puree NOT canned pumpkin pie mix that has seasonings already
- 3 eggs
- 1/4 cup water
- 5-6 oz chocolate chips (Optional)
Instructions
- Preheat oven to 350deg
- Line muffin tins with paper liners
- In a medium mixing bowl, add pumpkin puree and spice cake mix. Stir with wooden spoon until well blended1 boxed spice cake mix, 15oz can plain pumpkin puree
- Add beaten eggs and water. Stir until blended3 eggs, 1/4 cup water
- (Optional) Add desired amount of chocolate ships and mix5-6 oz chocolate chips
- Fill individual muffin cups to about 3/4 of the way
- Bake for 15-18 minutes, testing with a toothpick for doneness. Toothpick should come out clean.
